Comfort Food: Hashbrown Casserole

We all have foods that are a go-to when we want to eat something comforting. Being a stress eater myself, I definitely have a list. One of my favorites on this list is Hashbrown Casserole.

I found this recipe a couple of months ago and made it for a baby shower for one of my best friends. It is SO GOOD that I make it whenever there is an opportunity! Most recently I made this and took it into work for my office breakfast.

I got this recipe from Pinterest and haven’t altered it one bit.

What you’ll need:

  • 2 lbs frozen hash browns
  • 1/2 cup margarine or 1/2 cup butter, melted
  • 1 (10 1/4 ounce) can cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup onion, peeled and chopped
  • 2 cups cheddar cheese, grated + 1 cup of cheddar cheese for topping
  • 1 teaspoon salt
  • 1/4 teaspoon pepper + 1/4 teaspoon of pepper for topping

First, put your butter in a microwave-safe bowl and melt it. Preheat your oven to 350 degrees.

Next, combine the other ingredients in a bowl and mix well. When the hash browns have slightly thawed, put the butter in the mix and combine it with your mixture.

Next, pour the mixture into a casserole dish, top with cheese and pepper and pop it into the oven for 45 minutes or until fully heated and slightly golden.

Pull it out of the oven, let it cool for a second and serve!

It’s so good! Creamy, cheesy and buttery! This is definitely a cheat-day food and so delicious!
