Overnight Scrambled Eggs

It was my turn for an office breakfast and I really wanted to do something cool and fun but the foundation of my goal started with scrambled eggs. There wasn’t a bunch of time in the morning to scramble a bunch of eggs and I really didn’t want them to be dried out.

I was searching through Pinterest for a scrambled egg crockpot recipe but I couldn’t find one that slow cooked overnight. I’m guessing it was because of the fact that eggs cook extremely quickly and would thus dry out.

The description stated that the creators of the recipe made this for kids taking standardized tests every year. I thought that this had to be good if it’s something that kids liked, so I went with it.

What you’ll need for one batch:

  • 12 eggs
  • 1/2 cup heavy cream
  • 2 Tbsp. butter
  • 1 cup sour cream
  • 1 cup shredded Cheddar cheese
  • 1/8 tsp. black pepper
  • 1/2 tsp. salt

I needed more. So I doubled everything:

  • 24 eggs
  • 1 cup heavy cream
  • 4 Tbsp. butter
  • 2 cups sour cream
  • 2 cups shredded Cheddar cheese
  • 1/4 tsp. black pepper
  • 1 tsp. salt

In a skillet, I melted the butter.

I put all of the eggs in a bowl with the cream, salt and pepper, and whisked them together until the yolks were broken and the blend was well-mixed.

Then I scrambled the eggs.

After the eggs were scrambled, I mixed in the sour cream, salt, and pepper.

I then put it in a large baking bar pan.

Covered it with cheese and a little more pepper. Covered with with aluminum foil and popped it in the fridge for it to sit over night.

The next day, I got up 30 mins early, preheated the oven to 350 and popped it in their to bake for 20 minutes.

Once done, it looks like a casserole, BUT it breaks up like fresh, juicy scrambled eggs with a boatload of flavor.

I just popped these into a large bowl with a lid and brought them with me along with everything else for breakfast (post to follow)!

The kicker about all of this is that I wasn’t able to have a single bite because I’m on a cleanse. After it’s over, I think I’ll have a family breakfast at my house where we can fellowship over good food and great company.
