Buffalo Chicken Wraps

I’m all about a good sandwich or something with a crunch but on this cleanse, I can’t have breads for the most part, so finding alternative options is a MUST.

This is one of my favorites! Spicy, crunchy and refreshing!!

What you’ll need:

1/2 Pound Chicken

1 tsp garlic powder

1/2 tsp black pepper

1/4 diced red onion

2 tbsp Hot Sauce

1 Head Iceberg Lettuce

Start by boiling your chicken in a pot on the stove. I see the best results with shredded chicken if I boil it (or cook it overnight but I’m not that proactive) .

After the chicken is finished cooking (usually quickly, 10 minutes or less), I immediately transfer it over into my Kitchenaid mixer with the paddle attachment. Add the diced onion, the pepper and the garlic and put on the mixer for 3 to 5 minutes. This is the easiest way to shred chicken that I’ve ever encountered. I love it! Once shredded, I added the hot sauce and stirred it with a spoon. Just spoon a little bit into a lettuce wrap and it’s bazinga! All done.

This is so delicious and pairs well with roasted mushrooms, zucchini and a side of fruit.
