So Saturday night I got to spend dinner time with some of my favorite people! One of our favorite things is FOOD. Dinner this time was a cheese spread/crackers, caesar salad, white bean vegetable soup and cheesecake with fresh strawberries.
Now most people know that I can’t be a vegetarian – I love chick-fil-a and I love steak; I was beyond amazed by this soup recipe! It was so flavorful and filling! I had two bowls and asked for the recipe! I quickly snapped a picture of it on my phone and was thinking how I could incorporate this into my upcoming cleanse meals. I would need to reduce the amount of fat (from the beans) and add in protein – other than that – it was pretty much a clean meal!
So I spent Sunday doing a lot of meal prep and this was one of the meals on that list! I reduced the amount of beans by 1/2 and replaced it with 4 chicken tenders.
I started this modified recipe by dicing chicken and then seasoning it with garlic, pepper and thyme in a sauce pan. While that cooked, I chopped up the celery, onion and carrots. I removed the chicken and then put the veggies in the pan to cook until translucent. Once cooked, I added the chicken back in, put in the broth, put in the tomatoes and added more seasoning, I also then added the beans.
I let this simmer on low for about 3 hours and it reduced to this delicious stew jam packed with flavor.
This was so easy and it doesn’t even feel like I’m sacrificing anything when eating healthy!
