So today I start my 10 Day Cleanse Challenge. I’m eating lean and clean for 10 days and taking products to supplement a detox of my body.
One of the things that I wanted to share was a recipe that my friend Juli told me about. They’re baked turkey meatballs and they’re the perfect snack for a clean eater!
The basis of the recipe is as follows:
1LB of ground turkey
1/4 Onion Diced
2 White Mushrooms Diced
1 Egg
1 tsp garlic powder
1 tsp black pepper
1 tsp ground mustard
1 tsp Bragg Aminos
1 small zucchini shredded
You start by preheating your oven to 350 and getting out your mini-muffin pan. Dice the onion and mushroom then place it in your mixing bowl. Then put your lean ground turkey on top, crack the egg and load on the seasoning.
Two key ingredients that I want to point out are Bragg Aminos and ground mustard.
Bragg is the “safe” version of soy sauce. This is contains NON-GMO proteins and several amino acids that are beneficial to your health. It tastes JUST like soy sauce and is perfect when you’re looking for a kick of salt and flavor but trying to stay health-conscious of your meal. I find this in the organic section of my grocery store.
The reason I’m talking about Ground Mustard is the fact that it adds AMAZING savory flavor without the harm of salt. This completely transforms the flavor of these meatballs for me and I’m so glad my friend mentioned this!
After you put on the toppings, you need to put the shredded zucchini in the mix. I used a zester. I carved the skin off of it, then grated it until there was nothing left to grate. This ingredient is KEY because (like onion) it helps retain moisture in this snack.
Once everything is grated, you’ll mix it up and roll out 24 mini-muffin shaped meatballs. Place them in the different slots of the pan and bake them for 20-25 minutes or until firm.
The smell of deliciousness will fill your kitchen when they’re about done.
When you pull them out of the oven, let them rest in the pan until cooled a little bit.
I then use a spoon to scoop them out and put them into a container to keep in my fridge!
I pack these for protein-filled snacks (usually 3-5 per snack) and they last me all week! They taste GREAT alone but also pair well with dijon mustard, reduced sugar ketchup and balsamic vinaigrette!
